Easy Steamed Fish


The ingredients

Put all the ingredients with the fish

1 tbsp of light soya sauce

1 of 2 tbsp of water if u want more soupy then add more

Steam it together with u cook rice. Once the rice is cooked fish will be ready as well.

Ingredients
(Serves 2 or 3)

1 fish (for one person, about a 150g piece)
1 thick stalk spring onions, cut to 2 inch lengths (i omit this)
5 slices ginger, cut to strips
1 chilli padi, cut (adjust or omit to your liking)
1/2 to 1 tomato, cut to small wedges
2 shiitake mushrooms, cut to stripes
1 sour plum (aka salted plum)
1 tbsp light soy sauce
1 tbsp water (or more if you like more “soup”)

Directions

1. Place fish (skin side down) in a plate with a bit of depth. Drizzle light soy sauce and water over the fish. Keep in fridge (covered) for at least 30 minutes if you can.
2. Scatter the rest of the ingredients evenly over the fish.
3. Steam on high heat for 10-15 minutes (note: for the small piece I had, it’s cooked after 10 minutes of steaming).

Happycall - Coca Cola Mid Wings (可乐鸡翅)


Sauce to marinate the wings

Put them into the zip lock bag

Get ready a can of 200ml coke and 200ml of water

Pan fried the wings till golden brown on both side

aft that pour in the coke and water

Cover the pan

On and off open up and check if the sauce become thicken and lesser off the fire

Yummy!!!

Ingredients
8 to 10 mid joint chicken wings (about 320g)
1 tbsp cooking oil
200ml regular Coca-Cola (do not use diet or flavoured Coke)
200ml water

(A) Marinade
1 tsp light soy sauce
1/2 tsp dark soy sauce
1 tsp sesame oil

Directions
1. Marinade the chicken wings in (A) for 15 minutes.
2. Heat oil in wok or saucepan and brown chicken on both sides.
3. Add Coca-Cola, water and leftover marinade sauce. Simmer for 15-20 minutes until the sauce is reduced to a thick, sticky syrup. Halfway through simmering, turn the chicken pieces to the other side.

Happycall - Simple Pan Fried Prawn


Marinate the prawn

Put some oil and put the prawn into the pan then cover it



Ingredients:

10 or more medium Prawns
1 teaspoon Chicken Powder
1 tablespoon Corn Flour
a pinch of Sugar
1 tablespoon Oil

Method:

1. Clean prawns, cut off antenna and pat dry.
2. Marinate with Chicken Powder, sugar and corn flour.
3. Heat oil in pan over low heat.
4. Place prawns in pan and close the pan for 2 minutes
5. Shift the pan so the prawns can get evenly cooked.
6. Open the pan and turn prawns over.
7. Close pan and cook for another 1 to 2 minutes till all prawns are cooked.

Happycall - Glutinous Rice


The sauce

mushroom & dried shrimps

Heat up some oil and stir fry the mushroom and dried shrimps for few mins

Then pour in the sauce and stir fry for 2 mins

Add in the glutinous rice and mix till evenly brown

Pour in the 2-1/2 cup water

Cover the happycall pan cook for ard 20 mins remember to move the pan left and right to prevent it get burnt

TATA!! Delicious!!!

Ingredients

1) 3 cups of glutinous rice, soaked around 20 to 25 mins if you want it to be soft then leave it to overnite, then drained

2) 15 dried mushrooms, soaked then drained and sliced thinly (keep the soak mushrooms water for later used)

3) a handful of dried shrimp (amount can be adjusted depending on individual taste), soaked then drained (keep the soak water as well for later used)

4) 2-1/2 cup of water (include water reserved from the soaking mushroom & dried shrimp)

Sauce:

1 tbsp sesame oil
1-1/2 tbsp oyster sauce
1 tbsp dark soya sauce
1 tbsp light soya sauce
1/2 tsp salt
1 tsp ground white pepper
2 tsp table sugar
cooking oil

Garnish (all optional)

spring onion, chopped
fried shallots
red chilli, chopped
Directions:

1. All your ingredients to be ready. Mix together sesame oil, oyster sauce, dark soya sauce, light soya sauce, salt, pepper and sugar, set aside.

2. Heat the cooking oil in HCP over medium heat. When the oil is hot, Add the mushrooms and dried shrimp and fry for 4 minutes. Then add the sauce mixture and fry for another 2 minutes.

3. Next add the glutinous rice and fry for 4 minutes till all the rice is evenly browned. Pour in 2.5 cups of the water reserved from soaking the mushrooms, and fry for another 3 minutes.

4. Cover the HCP, using medium-low heat and cook for 20 minutes. Remember to move the HCP left and right to prevent the rice from being burnt. I flipped HCP twice. Garnish and serve.

Note: All ingredients amount are based on estimation and personal taste, you may adjust the amount according to individual taste. Heat also based on individual stove.
