Easy Steam Chicken

Easy Steam Chicken

Ingredient A: - 1 chicken (Cut in to pieces) or mid wings

Ingredient B: (marinade)

2 tbsp oyster sauce
1 tbsp sugar
¼ tsp pepper
1 tbsp hua tiao wine
1 tbsp sesame oil
½ tbsp corn flour

Ingredient C:(Optional)

8 clove of garlic (chopped)
1 ginger (chopped)
2 chillies (diced)
5 spring onion (diced)

Method:

1. Mix Ingredient A with Ingredients B evenly and marinate for 15 mins
2. Spread chopped garlic and ginger evenly on chicken,then sprinkle diced chillies and onion on top
3. Steam over high flame for 15 mins.

Kong Pao Chicken (宫保鸡丁)


Marinate the chicken with Hua Tiao Wine, Oil, Light Soya Sauce and Corn flour

Sauce ingredient: Light Soya Sauce, Dark Soya Sauce, Black Vineger, Sugar & Corn Flour

Garlic, Ginger & Dry chilly

Stir fry chicken till 70% then dish out and set a side

Fry garlic and ginger

After that add in dry chilly

Then add in the chicken meat

Add in the sauce

TADA !!!! Kong Pao Chicken


Ingredients:

1 1/2 boneless & skinless chicken breast (or 3 boneless & skinless chicken drumsticks)
8-12 dried red chilies (deseeded and cut into halves)
3 tablespoons cooking oil
5 slices peeled fresh ginger
2 gloves garlic (sliced diagonally)

For the marinate:

1 tablespoon corn starch
2 teaspoons soy sauce
1 tablespoon Shaoxing wine
1 teaspoon oil

For the sauce:

1 1/2 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 teaspoon sugar
1/4 teaspoon black vinegar
2 tablespoons water
1 teaspoon corn starch

Method:

1. Cut the chicken meat into small cubes, rinse in water, pat dry and marinate with the ingredients above for 30 minutes.
2. Mix the sauce ingredients in a small bowl and set aside.
3. Heat up a wok with one tablespoon cooking oil and stir-fry the marinated chicken until they are 70% cook. Dish out and set aside.
4. Clean the wok and add in the remaining 2 tablespoons of cooking oil until it smokes.
5. Add in the ginger and garlic slices and do a quick stir before adding in the dried red chilies.
6. Stir fry the dried red chilies until aromatic and they smell spicy, then add in the chicken meat.
7. Add in the sauce and stir continuously until the chicken meat is nicely coated with the sauce.
8. Dish out and serve hot with steamed white rice.

Baked Chicken MidWings in Hoisin & Char Siew Sauce

This baked wings is very nice and easy to prepare. Just marinade the chicken well (leave overnight if possible)

Ingredients:

12 pieces of chicken's mid-wings
1 tbsp Lee Kum Kee Char Siew Sauce
1 tbsp Lee Kum Kee Hoisin Sauce
1 tbsp water
Marinade the above

Method

Spread the chicken on a baking tray bake in preheat oven at 160 degrees celcius for 30 mins.
Turn over the chicken after 15 minutes for an even bake.

Braised Chicken & Mushroom





Ingredients
6 Chicken Wings
4 Hard boiled egg
6 Dried mushroom (soaked till soft)
3 Shallot, thinly sliced
3 Cloves of garlic, lightly smashed
2 Slices of ginger
200ml of water
1 Packet of Lee Kim Kee (Sauce for Teriyaki Chicken)

Methods
1. Heat up the saucepan with 1 tsp of sesame oil and saute the shallot garlic and ginger until fragrant.
2. Next add in the chicken wings and continue to saute for a few second then add in the Teriyaki Sauce and stir till well combined.
3. Pour in the water then follow by the pre soaked mushrooms and hard boiled egg and let it simmer on low heat for about 10 - 15 mins until the chicken is cook.
4. If you want the mushroom to absorb more flavour of the sauce you can remove the chicken wings first then let the mushroom and egg continue to simmer for another 10 mins.

Steam Herbal Chicken


Ingredient

Marinade Wings

TADA ... Steam Herbal Chicken

This is Simply delicious dish! And it's simple to prepare too.. Everyone loves it so much

Ingredients:
10 Pcs Chicken Wings
3 Pcs Dǎng shēn (当参)
1 Pce Běi Qí (北芪)
A few Slices Of Yu Zhu(玉竹)
1 Tbsp Wolfberries (枸杞子)
6 red Red Dates, remove seeds
2 tbsp Oyster sauce
1/2 Tsp Salt
1 Tsp Sesame oil
3 Tbsp Shaoxing wine
2 Tbsp Water

Method:
1) Marinade wings with Oyster sauce, Sesame Oil, Shaoxing Wine & Water for at least 30 mins, put them into zip lock bag then put back into fridge.
2) Place wings on plate together with dang shen, bei qi, wolfberries, red dates and don't forget the sauce in the zip lock bag don't waste pour the sauce over the wings.
3) Steam the wings for 30 mins or until the wings is cooked.
4) Serve while hot.
3) Serve immediately.

Easy Fried Chicken









Ingredients

Crispy Flour
Chicken thigh meat
Egg (lightly beaten)
Oil

Seasoning:
Oyster Sauce
Pepper
Sesame Oil


1. Season the meat with oyster sauce, pepper and sesame oil for at least 30 mins.
2. Dip the meat into the lightly beaten egg then into the flour. (remember do not coat too much flour)
3. Fried till cook or golden brown.
4. Serve it while hot.
