Happycall - Spicy Kung Pao Chicken


Marinate chicken: Hua Tiao Chew, corn flour and sugar

Chicken thigh meat

2 Tbsp wine

2 Tbs corn flour

1/2 Tbsp sugar

Sauce: Light soya sauce, Hoisin sauce and Plum sauce

Mix well

Add some oil to the pan

Add in dried chili pepper and fry till fragrance

Scope up the dry chili and add in garlic, ginger and chicken

When chicken is half cook add in dried chili and onion

Stir fry awhile then add in the sauce

Tada!!! Spicy Kung Pao chicken.

Ingredients

2 Pcs Chicken thigh Meat
20 Pcs Dried Chili Peppers (or more if you like more spicy)
4 Closes Minced garlic
1 Tbsp Minced ginger
1 Medium Onion

Chicken Marinate:

2 Tbsp Cooking Wine
2 Tbs Corn Flour
1/2 Tbsp Sugar

Sauce:

2 Tbsp Hoisin Sauce
2 Tbsp Plum Sauce
1/2 Tbsp Soya Sauce
4-5 Tbsp Water

Method

1. Heat some oil and fry dried chili peppers till fragance then remove and set it aside.
2. Stir fry garlic and ginger follow by add in chicken meat till the meat no more in pink.
3. Put back the dried chili peppers, onion stir fry for 3 mins.
4. Add in sauce stir well, you can add in 1/2 tbsp of shao xin wine (optional).
5. Cover lid for 5 minutes or till the chicken meat is done!

HappyCall - Braised Chicken with Carrots and Mushrooms


Ingredient: Mid wing, button mushroom, carrot, ginger and garlic

4 pcs of small rock sugar

Sauce: Dark soya sauce, oyster sauce sesame oil and 200ml of water

Heat up the sesame oil

Put in the wings

Fry till the wing no more in pink

Add in water

Follow by the carrot, mushroom, garlic and ginger then cover and cook for 5 mins

After 5 mins add in dark soya sauce

Add in oyster sauce

Mix well

Cover the lid and cook for 5 - 7 minutes

Optional if you want to add in hua tiao chiew 1/2 Tbs

After that add in the 4 pcs of small rock sugar and cover and cook for few more mins

Tada!!! Super delicious!!

Ingredients

10-12 Mid wings or half chicken
2 Tbsp Sesame Oil
1 Carrot (peeled and cut into bite-sized)
1 Can Button Mushroom
1 Tbsp Dark soya sauce
1 Tbsp Oyster sauce
1/2 Tsp 5 spice powder
4 small Rock sugar
3 Ginger slices
5 Garlic cloves, bruised

Method

1. Heat sesame oil in happycall, then add in chicken pce sitr fry until the wings is no longer pink.
2. Add in water, carrots, mushrooms, dark soya sauce, oyster sauce, 5 spice powder, ginger and garlic.
3. Using kitchen spatular, flip the chicken pce over so that they can absorb the braising liquid.
4. Add rock sugar for sweetness.
5. Simmer with lid closed for another 10 minutes or until the chicken is cooked

Happycall - Coca Cola Mid Wings (可乐鸡翅)


Sauce to marinate the wings

Put them into the zip lock bag

Get ready a can of 200ml coke and 200ml of water

Pan fried the wings till golden brown on both side

aft that pour in the coke and water

Cover the pan

On and off open up and check if the sauce become thicken and lesser off the fire

Yummy!!!

Ingredients
8 to 10 mid joint chicken wings (about 320g)
1 tbsp cooking oil
200ml regular Coca-Cola (do not use diet or flavoured Coke)
200ml water

(A) Marinade
1 tsp light soy sauce
1/2 tsp dark soy sauce
1 tsp sesame oil

Directions
1. Marinade the chicken wings in (A) for 15 minutes.
2. Heat oil in wok or saucepan and brown chicken on both sides.
3. Add Coca-Cola, water and leftover marinade sauce. Simmer for 15-20 minutes until the sauce is reduced to a thick, sticky syrup. Halfway through simmering, turn the chicken pieces to the other side.

Happycall - Shrimp Paste Chicken 虾酱鸡翅


Ingredient for marinate : Sesame oil, shrimp paste, sugar and 2 tbs of water

Mix all together

Flour for coating.. Rice flour and corn flour

Mid wings

Pour in the marinate sauce

Put them into zip lock bag then keep put them in the fridge for at least 30 mins

Get ready the flour: Rice flour and corn flour ratio 2:1

Light coat the mid wings

Ready to be fry in HCP

Deep fry

Yummilicious shrimp paste chicken.


Ingredient:

Chicken mid wings, or whole chicken cut up in big chunks

Marinate for about 15 chicken wings:

1 TBS - Shrimp Paste
1-1/2 TBS - Sugar
1 TBS - Sesame Oil
1 heaped TBS Grated Ginger (i omit this)
2 TBS Water to dilute the mixture
Rice flour
Corn flour


Method:

1. Wash clean chicken mid wings.
2. Mix the marinate in a bowl. Because personal taste differs, I strongly suggest you taste the marinate to see it suit your palette. The marinate should be a tad stronger than you would normally take because the chicken has not been added in.
3. Mix in the chicken ensure every pieces is coated evenly with marinate. Marinate at least for 30 mins.
4. The ratio of rice flour and corn flour should be 2:1. I have also added some pepper to lightly flavoured the flour.
5. Fry them till golden brown. Drained off the excess oil and served.

Happycall - Bake Mid Wings With Nam Yee (南乳雞翼)


Ingredient : Sesame oil, hua tiao wing, light soya sauce, dark soya sauce, sugar and nam yee

Mid wings

Mix all the ingredients together

Mix into mid wings and put in a zip lock bag marinate for at least half hr if overnight will be even better

Ready to be in Happycall pan

Low fire

TADA!! Yummilicious!


Marinade:

1 piece Nam Yee, smashed
1 tsp Sesame oil
1/2 tsp Soya Sauce
1 tbs Dark soya sauce
1 tbs Hua Tiao Wine
1 tsp. sugar

Method:

1. Mix chicken pieces with marinade and marinate for at least half hr if overnight will be better.
2. Heat your Happycall with half (1/2) tbs oil.
3. Put the wings in and cover up and cook for 3 mins, turn the pan and cook for another 3 mins.
4. Turn back the pan open up and yummilicious bake wings is ready.
5. Serves hot!
