Eggless Tiramisu


Ingredients: Mascarpone cheese, heavy cream caster sugar, vanilla extract, rum, coffee (cooled) ladyfingers

cocoa powder

Mix in sugar to mascarpone cheese

follow by 1 tsp vanilla extract

Then mix well

In a large bowl whip the heavy cream
 
Whip till soft peak

Fold half of the whipped cream into mascarpone mixture to lighten, then fold in the remaining whipped cream becareful not to over mix.

Mix in 2 tbsp Rum into the coffee or espresso

Get ready the ladyfinger

Dip ladyfinger into the coffee mixture (make sure the coffee is cooled)

Lay ladyfinger in the bottom

Spread the cream mixture ontop evenly

Sprinkle cocoa powder on top after that reply the procedure again dip ladyfinger lay them and spread the cream mixture and sprinkle cocoa powder. Cover and chill for at least 5 to 24 hours before serving.


Ingredients

500g of Mascarpone cheese, softened
1-1/2 cup of Heavy cream
1/3 cup of caster sugar
1 tsp of vanilla extract
2-1/2 cup of strong coffee or Espresso (let it cooled)
2 tbsp of rum
unsweetened cocoa powder
ladyfingers (preferably savogliardi)

Method:

1. In a large bowl whip the heavy cream.

2. In another large bowl cream togehter the mascarpone, vanilla and sugar till well incorporate.

3. Fold in half of the whipped cream into the mascarpone mixture to lighten, then after that fold in the remaining whipped cream becareful not to over mix.

4. To assemble, in a large bowl mix in the coffee and rum to set aside and also the cocoa powder

5. You can use 9 by 9 square baking pan (I do not have 9 by 9 pan so i use those normal container)

6. Dip each ladyfinger into the coffee mixture and lay in the bottom of your pan, then pour over some of the mascarpone cream mixture and spread evenly and sprinkle cocoa powder on top. Reply the same procedure dip each ladyfinger into the coffee mixture and then spread the remaining cream mixture over evenly and sprinkly cocoa powder ontop.

7. Cover and chill at least for 6 hours before serving.

Molten Chocolate Lava Cake


Ingredients: 2 eggs, butter, plain flour, caster sugar and semi sweet chocolate chips

Double boil and melt the chocolate chips and butter

Whisk eggs and suger till light and fluffy

Mix in the melt chocolate into the egg mixture

Follow by mix in the plain flour


Grease the bottom and sides

Baking in oven

Actually bake for less then 10 mins will be better around 6 to 7 mins


Yummilicious!!

Ingredients:

100g Semi-Sweet Baking Chocolate (increase it if you want more fudge)
Butter – 1/2 cup
Eggs – 2
Sugar – 1/3 cup
All-purpose Flour – 1/4 cup

Method: (This makes 4 ramekins/glass bowls/aluminium bowls)

1. Melt the chocolate and butter together. You can use a double boil.
2. In a mixing bowl, beat the eggs and sugar until it is of a light and fluffy.
3. Add the chocolate-butter mixture into the eggs mixture
4. Follow by add in the all-purpose flour and mix well.
5. Grease the bottom and sides of ramekins with butter and pour in mixture until 3/4 full.
5. Bake in a pre-heated oven at 170 deg C for approximately 10 minutes less then 10 mins will be even better if you bake 10mins or more the lava will gone :). Bake for a shorter time to achieve a gooey inside.
6. Sprinkle icing sugar all over the lava cake for decoration.
7. Serve warm with ice-cream, fruits or whipped cream.

Butter Cake


The Ingredients

Beat butter and sugar

Till light and fluffy

Add in egg yolk 1 at a time

Then add in milk

follow by add in sieve flour

mix well

Beat egg white in another clean bowl in high speed until soft peaks

Fold in egg white into butter mixture

Pour batter into 9" or 10" sq pan

Baking in oven at 175 deg for 40 mins

TADA!!! My yummy butter cake


Ingredients:

350 grm butter
280 grm sugar
8 large eggs, separate the yolk and white
330 grm self rising flour * (i used plain flour add in 1 tsp of double acting baking powder)
½ tsp salt
50 ml milk


Method:

1. Line and greased a 9” or 10” baking pan. Pre-heat the oven to 325 degree F. Sieve the flour and salt and set it aside.
2. Beat butter and sugar until light and fluffy, scrapping down the side a couple of times. Add in the yolk one at a time. Beat well after adding each one. Then add in the milk.
3. Fold in the flour in 3 batches. Mix well and set it aside.
4. In another clean bowl, whisk egg white on high speed until soft peaks. Fold in the egg whites into the butter mixture until well blended. Do not over-do it or the egg whites will deflate.
5. Pour into the prepared cake pan and bake for an hour or until the skewer comes out clean when tested

Moist Chocolate Cake


Ingredients

Chocolate Paste

Sieve flour and baking powder

After sieve leave it a side

Beat butter and suger

Beat until light and fluffy

Then add in vanilla essence

Then add in egg 1 at a time

Fold in flour mixture

Then follow by fold in chocolate paste mixture

Pour into a 7" cake pan

Baking in oven 180 deg

TADA!!!! My Yummy Moist Chocolate Cake


Chocolate Paste:

1/2 cup cocoa powder
1/2 tsp instant coffee (optional)
1/4 cup castor sugar (reduce 1-2 tbsp if you prefer it less sweet)
1/2 cup hot water
1/4 cup evaporated milk
pinch of salt

125g butter, softened
1 cup castor sugar
1 tsp vanilla essense
2 large eggs

1 cup cake flour
1 tsp baking powder


Method:

1. Grease and line bottom of cake pan with baking paper and preheat the oven to 180c.

2. Combined all ingredients for chocolate paste except MILK in a mixing bowl. Hand whisk mixture till sugar are fully dissolved.

3. Add in milk, stir to mix well. Set aside.

4. Sift cake flour and baking powder together for later use.

5. In another bowl, cream butter and sugar till it is light and fluffy. Add vanilla essense and continue with eggs one at a time. Beat till well combined.

6. Gently fold in flour mixture, alternate with the chocolate paste. *Start with flour and end with flour.

7. Pour batter into cake pan and bake for 45-50 minutes or till it is cooked.

8. Leave it to cool before unmould the cake.
