Chwee Kueh

Chai Po

Chai Po Ingredients: Garlic, chai po, sugar, dark soya sauce, light soya sauce & oil

Fry garlic

Pour in chai po and all the sauce

Add in sugar

Done!

Chai Po (Dried Radish) Ingredients:

Oil 200g
Garlic(chopped) 50g
Chai Po 300g
Dried Shrimps 30g (pounded or flossed in food processer) i omit this
Sugar 3tbsp
Salt 1tsp
Dark Soya Sauce 1tsp
Toasted white sesame 1 tbsp (grounded coarsely) i omit this

Method :

1. Heat oil in a heavy sauce pan. Fry Chai Po, dried shrimp and minced garlic until fragrant. Add sugar, salt and dark soya sauce for seasoning.
2. Add toasted white sesame.


Chwee Kueh

Ingredients: Rice flour, tapioca flour, corn flour, oil and water

Bring the water to boil with 1/2 tsp of salt

Mix all the 3 flour together

Mix well

Ready to pour into chwee kueh molds

Ready to be steam

Let it cool down

Kueh Ingredients:

Rice Flour 150g
Corn Flour 20g
Water 300ml
Oil 2tsp
Salt 1/2 tsp
Water 800ml

Method :

1. Place rice flour, corn flour in a mixing bowl and add 300ml of room temperature water. Stir well until there are no lumps of flour.
2. In a heavy saucepan, add the 800ml water, oil and salt. Heat the content until it just begin to boil.
3. Pour the flour mixture slowly into the saucepan and stir continuously with a wooden spatula to prevent lumping. The mixture will thicken to a gluey consistency. Turn off the heat and continue to stir.
4. Spoon the gluey paste into individual Chwee Kueh molds. Steam over boiling water for 15mins.

Happycall - Nutella Cake


Ingredient: Plain flour, caster sugar, egg, vanilla essence, baking powder, baking soda & nutella

Mix in all the wet ingredients

Mix in all the dry ingredients

Make a hole in the centre

Pour in the wet ingredients

Mix well

Pour into Happycall Pan

Mix in nutella

Done


Yummilicious!

Ingredients:

250g plain flour
2 tsp baking soda
1/2 tsp baking powder
175g caster sugar
250ml milk
90ml vegetable oil
1 large egg
1 tsp vanilla

nutella ! ( i added 2 big scoops! if you want more of the nutella taste, can add more)


Method:

1. Mix all dry ingredients, create a well like

2. Mix all wet ingredients,

3. Pour the wet ingredients into the dry ingredients and mix until no flour seen.

4. Cover it and cook over low fire each side for 8 to 10 mins. Do not flip too early, flip it when the base is cooked and dry.


Note:

1. Do take note not to overmix the mixture as it will toughen the cake texture.

2. For the nutella, you can choose to mix with some hot/warm water to melt it totally and mix in. Or you can chunks nutella all over.

Happycall - Dong Fen Crab


Seasoning: Ginger, Garlic, Light soya sauce, Dark soya sauce and a cup of water

Crab

Put into happycall pan

Seasoning

Add in dong fen

Add in the seasoning



This dong fen crab is tooooo yummy and i actually forgot to take picture when is ready .. hee hee.. you gonna try this dish!

Ingredients

2 medium Crabs
Dong Fen (1 bunch)
Some Garlic
Some ginger

Seasoning :

1 tablespoon of dark soya sauce
2 tablespoon of soya sauce
1 tablespoon Shao Xing Wine
1 cup water

Marinate (Crab) :

some sesame oil
a dash of pepper

Cooking method :

Marinate crabs with marinates ( i marinate for half a day)

1. Heat some oil in HappyCall
2. Fry the garlic and ginger
4. Add in the crab cover it and cook for about 6 - 7 mins (flip once in between)
5. Add in dong fen,stock and seasoning
6. Cook for another 1-2 mins
7. Ready to serve

Steam Cod Fish With Soya Sauce


Cod fish

Ginger

Sauce


Pour the sauce over the fish


Garnish with fried ginger


Ingredients:

1 piece of cod fish fillet, washed with salt and water
Ginger peeled and cut into thin strips
cooking oil

Sauce:
130ml light soy sauce
100ml of water
1/2 tsp of sesame oil (Optional)

Method:

1. Pat dry the cod fish and and steam it together while cooking rice.
2. Heat some oil in a wok. Fry the ginger strips till crispy. Set aside.
3. Mix all the sauce ingredient together. Set aside.
4. When the fish is done, discard the excess liquid. Pour the sauce over the fish and garnish with fried ginger.

Happycall - Peanut Pancake


Ingredients: Plain flour, caster sugar, baking soda, egg, yeast and water



Add in plain flour and sugar

Follow by yeast and baking soda

Add in Egg

Add in Water

Mix all ingredients like a paste

Pour into HCP

Close it

After done take it out and spread it wif butter

Then put the peanuts and spread it evenly then fold into half

Slice and Serve!

Ingredients:

130g plain flour
1 small egg
160ml water
25g sugar
1/2 tsp yeast
1/2 tsp bicarbonate of soda

Mix together and leave aside for 30mins.

Peanut spread:

20g peanut coarsely ground
15g sugar (Or adjust according to taste)
Small amount of sesame seed (lightly fry and pound/press)

Mix together for a dry texture

Method:

1. Pour batter into HCP, smooth out to get an even thickness

2. Cook on low heat for 6-8mins

3. Remove from pan, spread some butter and peanuts

4. Fold into half, slice and serve
