50g Brown Sugar
20g Caster Sugar
pinch of salt
(B)
1 egg
(C)
150g golden syrup
(D)
270g All Purpose flour
2 tsp ginger powder
1/2 tsp cinnamon powder
Method
1. Mix (A) till well combined. Add in (B) and cream till smooth.
2. Add in (C), then (D) and mix till well blended.
3. Let it rest for 15 minutes. Then roll the dough to 3mm thick and cut it out using Gingerbread Boy & Girl cookie cutters.
4. Pre-heated oven and bake at 180 deg C for 15 minutes.

Kong Pao Chicken (宫保鸡丁)
Marinate the chicken with Hua Tiao Wine, Oil, Light Soya Sauce and Corn flour
Sauce ingredient: Light Soya Sauce, Dark Soya Sauce, Black Vineger, Sugar & Corn Flour
Garlic, Ginger & Dry chilly
Stir fry chicken till 70% then dish out and set a side
Fry garlic and ginger
After that add in dry chilly
Then add in the chicken meat
Add in the sauce

Ingredients:
1 1/2 boneless & skinless chicken breast (or 3 boneless & skinless chicken drumsticks)
8-12 dried red chilies (deseeded and cut into halves)
3 tablespoons cooking oil
5 slices peeled fresh ginger
2 gloves garlic (sliced diagonally)
For the marinate:
1 tablespoon corn starch
2 teaspoons soy sauce
1 tablespoon Shaoxing wine
1 teaspoon oil
For the sauce:
1 1/2 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 teaspoon sugar
1/4 teaspoon black vinegar
2 tablespoons water
1 teaspoon corn starch
Method:
1. Cut the chicken meat into small cubes, rinse in water, pat dry and marinate with the ingredients above for 30 minutes.
2. Mix the sauce ingredients in a small bowl and set aside.
3. Heat up a wok with one tablespoon cooking oil and stir-fry the marinated chicken until they are 70% cook. Dish out and set aside.
4. Clean the wok and add in the remaining 2 tablespoons of cooking oil until it smokes.
5. Add in the ginger and garlic slices and do a quick stir before adding in the dried red chilies.
6. Stir fry the dried red chilies until aromatic and they smell spicy, then add in the chicken meat.
7. Add in the sauce and stir continuously until the chicken meat is nicely coated with the sauce.
8. Dish out and serve hot with steamed white rice.

Chocolate Chips Cookie
The Ingredients
Almond nibs toast for 3 mins
Beat Butter, caster sugar, brown sugar and egg

Ingredients
250g butter
120g caster sugar
100g brown sugar
2 eggs, lightly beaten
320g all purpose flour
80g corn flour
1/4 tsp baking soda
2 tbsp cocoa powder
100g almond nibs (chopped almonds)
250g chocolate chips
Method
1. Preheat oven to 200 deg
2. Combine flour, corn flour, cocoa powder & baking soda in a clean bowl
3. Beat butter, sugar and brown sugar until creamy, add in eggs and beat well.
4. Add in flour mixture and beat well.
5. Add in chocolate chips and almond nibs.
6. Drop tea spoon onto a baking sheet or parchment paper.
7. Bake for about 10 minutes or until golden brown.
8. Let cool on wire racks.

The Ingredients
Melt butter, cooking oil, brown sugar & golden syrup
Mix till smooth like this
Plain flour, ginger, cinnamon powder & cocoa powder
Pour the mixture into the flour mixture
Fold and mix well to form a dough
Roll into thickness 5mm stamp out with a bear cookies cutter
Ready to be bake

1. Place ingredient (A) into a small pot, turn to low heat and dissolve butter.
Turn off heat keep on stirring till consistency becomes smooth.
2. Put in ingredient (B) mix well to form a dough.
3. Roll out a thickness of 5mm, stamp out cookies with a cutter.
4. Bake in a preheated oven at 170 dec for 15-20 mins.
5. Cool cookies before store.

Long Beans Omelette
Stir fry long beans till turn bright green
Add in lightly beaten egg

Ingredients:
4 eggs - lightly beaten
1 cup long beans - cut into 1/4 inch lengths.
salt and pepper
1 tsp light soya sauce
2-1/2 tbsp oil
Method:
1. Beat eggs with salt and pepper and light soya sauce
2. Heat oil in pan and when oil is hot, add in the long beans and saute until long beans turn bright green.
3. Add in eggs and fry until the bottom is brown, then flip omelette and brown the other side.
4. Dish up and server hot.
Braised Mushroom with Minced Pork
The sauces ingredient
Stir fry mushroom till fragrant and add in minced pork fry till 80% done
Add in the sauces mixture
Simmer on low heat for one hour

Seasoning for minced pork
1 tsp Light soya sauce
1 tsp Dark soya sauce
A little sugar
1/2 tsp Sesame oil
1/2 tsp Corn starch
Method:
1. Season minced pork with light soya sauce, dark soya sauce, a little sugar,sesame oil and a little corn starch.
2. Soak shitake mushroom in water and dice into small cubes.
3. In a heated wok, add 1 tbsp oil, fry mushroom until fragrant.Add minced meat and stir fry until 80% cooked.
4. Add seasoning.
5. Add chicken stock and simmer on low heat for one hour. If you want the sauce to be thicker texture add a little corn starch solution.

180g butter
80g Horlicks (original flavour)
200g top flour
25g cornflour
25g milk powder
20g caster sugar
Decoration:
Chocolate chips
Koko Krunch
Chocolate rice
Method:
1) Sift the flour, cornflour and milk powder.
2) Cream the butter, Horlicks & sugar in low speed. Do not overbeat.
3) Add the sifted flour and fold to form a dough.
4) Divide dough into 10g each.
5) Insert 2 pieces of Koko Krunch to form the ears, 1 chocolate chip as the nose & chocolate rice for eye.
6) Bake at 160 degC for about 20 minutes.
7) Cool before storing.
